Design and manufacturing of a pasteurizer for smoothies, fruit juices and vegetables
SACOME has been a reference provider of pasteurization systems for the Beverage and Juice Industry since the beginning of its activity. We have recently been awarded an additional order to design and manufacture a pasteurizer for smoothies, fruit juices and vegetables from an European engineering.
The line should be able to process very different products in terms of composition and properties, in particular juices and smoothies of low and medium-high viscosities, some of them with solids content in suspension. With this scenario, our technicians worked on the thermal calculation of the different sections (preheating, final heating, cooling for hot filling and cooler for the sterilization phase). We have recommended to our client the maximum flow rates to consider for each product, between 2,000 l/h, for the products with greater consistency, and 7,000 l/h for the most liquid ones, also indicating the expected values of pressure drop in the production and cleaning phases, essential to the purpose of properly selection of the pumping station.
Finally, it should be noted that the final client had a very tight space in the plant, reason why our Technical Department and Project Department assessed different alternatives and proposed an economically viable solution that would fit the client’s expected layout.

The importance of rheology in the design of food plants
The importance of rheology in the design of any processing plant is crucial since the sizing of many of the elements composing it is very dependent on this “resistance”, also taking special relevance with food products: heat exchangers, pipes, valves, pumps, mixers, etc.
