High-pressure annular-space heat exchangers for the pasteurisation of a plant-based dessert.

All these years of experience in food applications allow SACOME to approach very different processes with solid technical criteria, especially when both the product and the operating conditions require a specific solution.

A recent example is the supply of a skid fitted with 14 high-pressure annular-space tubular heat exchangers for the pasteurisation of 4,000 l/h of a plant-based dessert.

In this type of product, viscosity is a key factor when defining the heat transfer technology. For that reason, annular-space heat exchangers are particularly well suited to this duty. Their design, however, requires specific technical expertise, since the calculation methods involved differ from those used for other tubular exchanger models.

There is also an important mechanical aspect to consider. Because this design is based on concentric tubes, with some of them operating under external pressure, a detailed mechanical calculation is required to prevent tube collapse during operation.

In this particular project, the design pressure on the product side was especially demanding, so SACOME’s technical team selected the S-TF40AH-D model, developed for high-pressure sanitary annular-space applications. Some of the inner tubes were manufactured with a large wall thickness, and the entire product side was polished to achieve the surface roughness required for food applications.

This project reflects an important part of SACOME’s work in the food industry: selecting the right geometry, resolving the mechanical behaviour of the equipment and adapting each design to the real conditions of the product and the process.
