Etude de cas sur la fusion et le retraitement de la margarine<\/h2>\n

Un leader mondial de l’industrie chimique et alimentaire a contact\u00e9 SACOME pour r\u00e9soudre un probl\u00e8me de corrosion sur l’un de ses \u00e9changeurs de chaleur. Cet \u00e9changeur de chaleur \u00e9tait destin\u00e9 \u00e0 la fusion de margarine en vue de son retraitement ult\u00e9rieur. Dans cette application, plusieurs difficult\u00e9s sont apparues lors de la reconception de l’\u00e9changeur de chaleur \u00e0 calandre. D’une part, le choix du mat\u00e9riau le plus appropri\u00e9. D’autre part, une interpr\u00e9tation appropri\u00e9e du processus thermique que subit la margarine, car il s’agit d’un produit semi-solide qui passe \u00e0 l’\u00e9tat liquide lorsqu’il est retrait\u00e9.<\/p>\n

Il est courant d’utiliser des \u00e9changeurs de chaleur \u00e0 surface racl\u00e9e pour cette application. Toutefois, le co\u00fbt initial \u00e9lev\u00e9 de l’installation, ainsi que les co\u00fbts d’exploitation \u00e9lev\u00e9s et les probl\u00e8mes habituels d’\u00e9tanch\u00e9it\u00e9 m\u00e9canique, font de l’\u00e9changeur de chaleur tubulaire une alternative efficace \u00e0 prendre en consid\u00e9ration.<\/p>\n

La margarine est une \u00e9mulsion eau dans l’huile dans laquelle la phase aqueuse est finement diffus\u00e9e sous forme de gouttelettes dans la phase continue de graisse animale ou v\u00e9g\u00e9tale. Ce produit est fabriqu\u00e9 apr\u00e8s diff\u00e9rentes \u00e9tapes, telles que la pr\u00e9paration de la phase aqueuse et de la phase grasse, la pr\u00e9paration de l’\u00e9mulsion, la pasteurisation, le refroidissement et la cristallisation, ainsi que l’emballage ou le remplissage.<\/p>\n

Si la margarine animale ou v\u00e9g\u00e9tale n’atteint pas la consistance et\/ou la texture souhait\u00e9e, le produit doit \u00eatre dirig\u00e9 vers un r\u00e9servoir tampon pour \u00eatre retrait\u00e9. Pour permettre le pompage et le retraitement, la margarine, qui a une consistance semi-solide, doit \u00eatre fondue afin d’obtenir une phase liquide facilitant le pompage et le traitement.<\/p>\n

Sp\u00e9cifications des mat\u00e9riaux<\/h2>\n

L’\u00e9changeur de chaleur, fabriqu\u00e9 en acier inoxydable aust\u00e9nitique 316, souffrait de corrosion. Pour cela, un \u00e9chantillon a \u00e9t\u00e9 demand\u00e9 au client afin d’analyser et de pr\u00e9coniser un mat\u00e9riau adapt\u00e9. En \u00e9troite collaboration avec l’UPCT (Universit\u00e9 Polytechnique de Carthag\u00e8ne), SACOME a pu tirer des conclusions sur l’origine de cette corrosion afin d’\u00e9viter son apparition dans les conceptions futures.<\/p>\n

Les experts de l’UPCT ont r\u00e9alis\u00e9 diff\u00e9rentes analyses sur l’\u00e9chantillon pr\u00e9sentant des signes de corrosion : analyse chimique par spectrographie, analyse macrographique et micrographie.<\/p>\n

Il a \u00e9t\u00e9 conclu que l’\u00e9chantillon pr\u00e9sentait une corrosion par piq\u00fbres localis\u00e9e due \u00e0 l’effet combin\u00e9 d’une teneur \u00e9lev\u00e9e en chlorure (avec un pourcentage de sels sup\u00e9rieur \u00e0 1 %) et de temp\u00e9ratures de traitement \u00e9lev\u00e9es. Les techniciens de l’UPCT ont ainsi analys\u00e9 la r\u00e9ponse de diff\u00e9rents aciers inoxydables (aust\u00e9nitiques et ferritiques aust\u00e9nitiques), non seulement \u00e0 la corrosion par piq\u00fbres, mais aussi \u00e0 la corrosion galvanique, interstitielle, \u00e0 la fissuration sous contrainte et \u00e0 la corrosion intergranulaire.<\/p>\n

De plus, l’\u00e9tude des diff\u00e9rents mat\u00e9riaux a pris en compte le pH et la teneur en Cl- du produit. Sur la base de cette comparaison, et compte tenu des aciers inoxydables commerciaux disponibles dans l’industrie, les ing\u00e9nieurs de SACOME ont s\u00e9lectionn\u00e9 un acier Duplex comme \u00e9tant le plus adapt\u00e9 \u00e0 cette application.<\/p>\n

Sp\u00e9cifications du produit<\/h2>\n

La mati\u00e8re grasse de la margarine consiste en un m\u00e9lange d’huiles, d’\u00e9mulsifiants, de l\u00e9cithine, d’ar\u00f4mes et d’autres ingr\u00e9dients mineurs dissous dans le m\u00e9lange, tels que des colorants ou des antioxydants. En outre, la phase aqueuse peut avoir une teneur variable en sel. Cette composition complexe, ainsi que le changement de phase qui se produit lors du chauffage de la margarine, rendent n\u00e9cessaire une analyse rh\u00e9ologique du produit. L’objectif de cette analyse est de parvenir \u00e0 une conception thermique fiable de l’\u00e9changeur de chaleur tubulaire. C’est pourquoi les propri\u00e9t\u00e9s thermiques du produit ont \u00e9t\u00e9 obtenues dans les laboratoires de l’UPCT \u00e0 partir d’un \u00e9chantillon du produit.<\/p>\n

La mod\u00e9lisation correcte du processus de fusion et de cristallisation, de la chaleur latente et de la chaleur sp\u00e9cifique est essentielle pour la conception thermique de l’\u00e9changeur de chaleur.<\/p>\n
